recipe: lemon poppy seed pound cake

i modified this recipe from the one in my trusty better homes and gardens cookbook for “sour cream pound cake”…

  • allow eggs, butter and yogurt to stand at room temperature for 30 mins.
  • preheat oven 325, grease loaf pan (mine is 9″x5″x3″).
  • combine flour, baking soda and baking powder in bowl; set aside.
  • add the juice plus zest of a lemon to the yogurt, mix til combined.
  • in mixing bowl, beat butter on med/high speed for 30 seconds.
  • gradually add sugar, beating about 20 mins or until light and fluffy.
  • mix in vanilla.
  • add eggs, one at a time, mixing about 1 min after each.
  • add flour mixture and yogurt, alternately, mixing on medium/low speed.
  • add poppy seeds and mix til just blended.
  • (scrape sides of bowl as needed, throughout).

  • pour into loaf pan

pour batter into loaf pan

  • bake in oven, preheated at 325, for 60-75 mins or until wooden toothpick inserted into center of loaf comes out clean.
  • let loaf pan cool.lemon poppy seed pound cake
  • remove from pan and let loaf cool on rack.
  • enjoy!

    Mmmmm! Pound cake…. last time I made one it came out beautiful on the outside but the center was a gooey lump. I thought it was because I used a glass baking dish but I see you used one too. And your cake looks perfect. I can’t figure out what I did wrong. Since it isn’t too hot yet to run the oven I’ll try your recipe tonight and see how it turns out.

    Yummy! This is one of my fav desserts. I have my summer off from teaching and cooking is on my agenda to do during the break. This will be my next domestic project…and then I will run for an hour afterward because losing weight is my other goal this summer!!
