i put basil on just about anything. i can hardly count what i’m sharing below as a “recipe” but i love making them because there are no rules and they are quick and tasty.
i take a whole grain baguette (or crackers, or ryvita crisp bread), slice it up and stack whatever is in my garden at the time. i top it with basil and sprinkle of cheese (feta below) and sometimes a dash of garlic powder. if i want the cheese to melt, i pop it in the oven for a quick broil or put it to toast beside whatever i’m making on the bbq.

as an aside… last time, tara mentioned that she’s having trouble growing her basil in the garden possibly because of soil quality. tara, you can pull up or cut whatever is remaining of your plant and let it grow roots in water like shown here (thanks pam, great photos!) and replant it in a container to grow indoors during the winter. they need a bright window. also, when you go to pick the leaves off, take the top most couple of leaves (rather than from the side or from a stem) and the plant will grow wider and fuller. i only learned that last year and this year my basil plants are doing much better.

This year? I’ve only just looked at it out of the corner of my eye projecting my basilaziness in it’s general direction. How dare it overgrow and seed like that while I wasn’t paying attention. Pfft.

Except mind died when we went camping for 4 days and it became a dried herb when I came back. ;(
I had a huge pot with a mix of herbs…. lesson learned!
So my tip: water them! ;)

I love basil as well… in salads, in sandwiches, in stirfries, in cocktails… :) I unfortunately don’t have any basil of my own. It’s so cheap here in the summer that I just buy a bunch at the farm market, put it in a vase and cover it with a hole-y transparent plastic bag and it keeps for weeks and weeks, or until it’s eaten. I’ve never been able to get them to make roots though, so I’m not sure what I’m going to do during the winter other than buy expensive grocery store basil. hmm….
