the other day, we made friends with cookies…

no wait. that should read, we made cookies with a friend. my daughter had a friend over, and we decided to make cookies. i gave the girls a basic peanut butter cookie recipe and let them get to it. i asked them if they’d rather use maple syrup chips or white chocolate chips. is it surprising that they used both?

here’s the simple recipe, in case you want to make friends with cookies (or the other way ’round) this weekend. enjoy!

ingredients:

  • 1/2 cup all natural unsalted peanut butter
  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup whole wheat flour
  • your choice of chocolate chips (optional)
directions:
  1. in a large bowl, mix peanut butter and butter on medium-high speed until well blended and smooth.
  2. add sugars, egg and vanilla extract, and continue to mix for about another minute until blended. scrape sides of bowl if needed.
  3. add remaining ingredients and mix until just blended.
  4. scoop dough out with tablespoon or similar, rolling them into 1″ balls.
  5. place balls onto ungreased cookie sheet, spacing them out about an inch apart.
  6. press balls flat with a fork or the back of a spoon, and if you’re adding chips, press a few into the dough.
  7. bake at 375 F (190 C) for 8 to 10 minutes, or until golden brown. if you burn them, try this.
  8. most recipes say to cool cookies on wire racks, but seriously who does that? dunk them immediately into a glass of milk and enjoy :-)

    Yum I can almost smell them and taste them…brings back sweet memories…I always liked the pressing with the fork finish too :)

    In this hectic day and age taking time with kids to bake cookies is so special! REAL cookies…thanks for sharing!
