we’ve been making cookies the last few days. a lot of cookies.

all shapes and sizes, decorated by little hands…

we don’t usually do a whole lot of baking at this time of year, mostly because i don’t like to have too many sweets in the house. bah humbug, i know. although, i seem to say that every year, and we always end up making something.

we packaged some up and the kids delivered them to their nearby friends…

6-ingredient basic sugar cookies
good for rolling out and cutting out into shapes, or pressing into moulds.
mix 1 cup butter and 1 cup sugar until well blended. add 1 egg and 2 teaspoons vanilla extract, mix. blend 2 and 3/4 cups flour with 1 teaspoon salt, and add it to the mix (not all at once) until combined. roll into a ball, which can be covered with plastic wrap and cooled to roll out later, or used right away.
you can roll out the dough to any thickness you wish, just vary the time in the oven accordingly. our cookies were pressed into moulds, and also cut into shapes that were about 1/4″ (about 1/2 cm) thick. i baked them on parchment in a 350 degree (175 c) oven for about 8 minutes, and let them cool completely on a rack before decorating.

Gorgeous! We made ours yesterday, too. The teacher’s strike was a perfect day to invite the kids’ friends over to decorate sugar cookies. Somehow the dinosaur cookie cutter got in there, though…:)
perfect way to spend that day! hmm, we had a hippo cookie cutter that made it in there, but then, there’s that christmas song about hippos so i guess it was on theme after all!
Christmas cookies not only taste good and in your case look so sweet and lovely too, but it makes the house smell so festive.
Back in the day I used to do cookie baking marathons, making (one year) 3 dozen different kinds of cookies. Eventho we gave lots and lots away it proved to be too much temptation around the house with those tins winking and saying “eat me” LOL
Clearly you and your children had lots of fun and created some sweet Christmas memories and perfectly thoughtful and yummy gifts too!
