fall colours

for just a few weeks in autumn, before a cold wind blows the leaves to the ground, the trees change. it happens every year of course, but each time they burst with colours so vibrant, i can’t help but think they look unreal. if an artist used those colours of paint to depict a fall scene on canvas, i’d think she was exaggerating.

but somehow, mother nature gets away with it every year.

friday archive dive!

it’s canadian thanksgiving on monday, and a nice long weekend ahead. i’ll keep this short and sweet, and just say this week’s topic can be on anything you wish to share. so dig up that old post, and let a whole new audience discover it. you can add links ’til monday night.

before i begin my long-weekend descent into a turkey-induced tryptophan coma, i want to give sincere thanks to everyone for reading, participating and commenting here, even when i don’t always make sense…make sense to you, that is. in my mind, i’m lucid! ;-)

easy apple sauce recipe

ingredients:

apples.

that’s it. no sugar either. it’s easy, wholesome and fairly quick.

directions:

i peeled, cored and cut apples to make about 6 cups. this time i used my apple slicer.

i put the apples in my cast iron pot, on medium heat.

like i mentioned in the apple crumble recipe, the outcome depends on the type of apple, its water and sugar content. some apples take longer to bake, some stay crisp longer. so use your own taste and judgement, you can add water if it seems too dry, add sugar if it’s too tart. i used a mixture of cortland and empire apples, because that’s what we picked.

it took about 15 minutes of cooking. in the past, i’ve had to mash or use a blender after cooking the apples to smooth out the big chunks, sometimes adding water. but this one reached applesauce texture on its own.

variations and uses: 

* add a dash of cinnamon or pumpkin spices (cinnamon, nutmeg, ginger and allspice).

* stir in some honey for sweetness.

* blend in other fruits for what you see on store shelves as “apple medleys”… blueberries, bananas, etc.

* use it as a topping on toast, pancakes, or waffles.

* apple sauce can be used as an oil substitute in baking. i sub it in for most cakes and loafs, it adds sweetness too so i can cut back on the sugar a recipe might require.

* i gave some to my neighbour and she put some in pillsbury crescents, rolled and baked them with a sprinkling of sugar on top.  pretty easy if you’re not into traditional baking.

me, i’ve got a jarful in the fridge (ok, half a jarful now — the kids snack on it). it will keep for about a week. you can freeze it too, or use a trusted recipe and can it. it will require lemon juice or another acid to help preserve it.

you think it only happens to other people

well, it finally happened to this blog. you hear about it, but you think you’re immune. i mean, this is just a little blog, what could i possibly have said to cause this?

i’ll rewind a little.

the other day, i sat down to share with you what i made with the rest of those apples. i gathered my photos and all my ingredients, and then, it happened. out of the blue…

i know. out of nowhere. my blog got pitbulled.

i couldn’t believe it. you think it only happens to recording artists. they are going along singing their most recent song, then something happens and pitbull shows up. who invited that guy? it gets me every time on the radio too. i’m listening to a favourite pop song (yes, i do. it keeps me kewl with the young folk. though i think that last sentence just blew my cover huh?) and then just when you least expect it, bam! pitbull shows up and starts rhyming off a list of really inappropriate things he is going to do. really, pitbull is everywhere it seems. reminds of carlos santana in the late 90’s… remember all those collaborations?

yes, yes we know. dude. easy on the font size. clearly, you are a talented musician and i’m glad that those collaborations brought you much deserved success and recognition in the latter part of your career. but i’m trying to write a blog post here, and frankly, you’re hogging up a whole lot of pixels.

anyway, i thought i was safe from this sort of thing on the blog, but apparently not. i wasn’t sure what to make of it all. i mean, who do you complain to about such an intrusion? but then, the more that i think of it, this pitbull guy…
